School is back in session here in Knoxville, but it is still very much summer. I wanted to do something fun with the kids before plunging back into our school routine, so I decided to take them peach picking at our local orchard. How much do you love Iced Coffee? I’m not going to lie, I pretty much live on it during the summer months. Come mid-April I’m ready to trade my hot caramel macchiato for an iced coffee until about October when I can resist the pull of a pumpkin spiced latte no longer. But let’s be real, I can’t afford to go to Starbucks everyday. So I set out to find a cheaper way to have my favorite drink. Since I used to work at Starbucks, I can honestly tell you that this tastes like the real thing for a fraction of the price. You need a whooping 3 ingredients for this dream come true, so hold onto your hats while I show you how amazing this is.
My friend from church asked me to provide some goodies for her “Christmas in July” event. I was happy to oblige because the only thing better than Christmas in July is Christmas FOOD in July. The first thing that came to mind were the chewy Butterscotch Cookies I used to eat with my Nana when I was a little girl. She always seemed to make them around Christmas time, so for me butterscotch cookies are synonymous with Christmas trees, holiday music, and nativity scenes. I wish I had gotten the recipe from her before God took her to heaven, but she died when I was 13 and I didn’t quite have my love for cooking just yet. I’ve told you before that I am a sucker for a yummy salad. So when my friend brought this AMAZING Vegetable Salad with Italian Basil Dressing to our Bible study one night, I was hooked. She said it was simple and took all of 5 minutes to make. She sent me over to Jenn at Once Upon a Chef who created the original recipe. I have now made this dressing several times and love it!
