I’ve told you before that I am a sucker for a yummy salad. So when my friend brought this AMAZING Vegetable Salad with Italian Basil Dressing to our Bible study one night, I was hooked. She said it was simple and took all of 5 minutes to make. She sent me over to Jenn at Once Upon a Chef who created the original recipe. I have now made this dressing several times and love it! I have made a few tweeks here and there and have finally settled on what I think is the perfect combination. Let me show you how easy it is: [Read more…] about Vegetable Salad with Italian Basil Dressing
When I first moved to Knoxville, I was excited to try all the new restaurants! Since I am a bit of a foodie, I wanted to try Central Flats and Taps, one of the highest rated restaurants in Knoxville and a place my friends raved about. So on date night my hubby and I tried it out. Dan fell in love with their spicy hot wings and I swooned over their Grilled Chicken and Artichoke Salad (they call it the Spicy Chicken Salad). It was so simple and fresh I was pretty sure I could recreate it at home and save some moo-lah.
I was right! I was able to make this scrumptious salad and the chicken to go with it in under 30 minutes and for a fraction of the cost. Though I love date night and having someone else wash the dishes, I was excited to make something at home that tasted so “restaurant quality.” Let me show you how I made it: [Read more…] about 30 Minute Grilled Chicken Artichoke Salad
I don’t think there is anything more colorful and scrumptious than fresh summer recipes that highlight the beauty of produce. Our garden is going crazy with lettuce and the local berry patches are full of strawberries for picking, so I decided to make this Pecan and Goat Cheese Strawberry Salad. I serve it with homemade raspberry vinaigrette. I love how it fills me up for a light lunch and how it compliments nearly any piece of meat for dinner. I got a call from my friend who was planning my other friend’s baby shower. She wanted my help with some food and asked me to bring a side dish that was healthy and would serve several people. My husband and I are committed to staying on a budget, so I knew the recipe would need to be budget friendly as well. I decided to go with this Cranberry, Apple, and Broccoli Salad because I felt it met all the requirements. And the added bonus? It only took 10 minutes to make! I pulled it out of the fridge, put plastic wrap around the top, and transported it easily to my friend’s house. So this definitely tops my list for easiest, healthiest, budget friendly recipes!
